And then hooking up a 250 gig drive I already have for various media. What's the best way to go about this? I know little to nothing or RAID or ATA and could use some help.
Does your machine will have RAID controllers? Are you planning of having redundance on your data? If not to any of those question just go for ATA discs.

I might use this box to do some music recording in the future, and that's one reason why I was thinking of going RAID. Another is that I've never had a nice gaming rig, and if the option is there, why not set it up all sexy like?
Yes they are available to use but remember they are not as easy as regular HD to setup.
Like I said before you will need special controller cards and get some knoledge about it... this is not plu-in-play. Also keep in mind that RAID technology was created with redundance/mirroring in mind.
Even though you can use this technology you have to balance the gain x "headache" and see if this is worth
