 School Project help.
Ok so im In food and beverage management for school atm. Its the class that teaches you the entire book keeping part of restaurant management like opening one. We have to do a project where we have to make a restaurant that meets the teachers given guidlines. For my guidlines I decided to do a bbq place. Im starting it this week and I have 5 weeks.
Now on to what I need from you my lovable butt loving friends. IF YOU HAVE ANY EXPERIANCE IN BBQ OR KNOWLEGE AT ALL IN IT please leave some info. What I nmean is places around you that are great bbq. Give me addresses so i can look it up and see the area. What kind of bbq is around you. The type of bbq in your region. I mmainly asking the texas crowd (im looking at you G) but if anyone else has something to provide please dont hestitate to add. This is a huge portion of my grade and if done well enough may actually be a future plan for my business. This is extremely important. Thanks guys I appreciate it.

One thing I can do is give you an awesome BBQ sauce recipe to add to your business plan. 2 cups ketchup 2 cups tomato sauce 1 1/2 cups brown sugar 1 1/4 cups red wine vinegar 1/2 cup unsulfured molasses 4 teaspoons hickory-flavored liquid smoke 4 tablespoons unsalted sweet butter 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/4 teaspoon chili powder 1 teaspoon paprika 1/2 teaspoon celery seed 1/2 teaspoon caraway seed 1/4 teaspoon ground cinnamon 1 teaspoon cayenne pepper 1 teaspoon salt 1 teaspoon coarsely ground black pepper
Directions: 1. In a large saucepan over medium heat, mix together the ketchup, tomato sauce, brown sugar, wine vinegar, molasses, liquid smoke and butter. Season with garlic powder, onion powder, chili powder, paprika, caraway and celery seed, cinnamon, cayenne, salt and pepper.
2. Reduce heat to low, and simmer for up to 20 minutes. For thicker sauce, simmer longer, and for thinner, less time is needed. Sauce can also be thinned using a bit of water if necessary. Brush sauce onto any kind of meat during the last 10 minutes of cooking.
This sauce has an initial bite that'll burn your mouth slightly then you'll be able to taste the sweetness and acidity. Great stuff.
Also, look up some man versus food on youtube. That guy has gone through the gauntlet when it comes to BBQ. Check out some BBQ pitmaster episodes too, those are pretty good help for tips and tricks on how to cook BBQ. Learn about slow and low cooking, most good BBQ places use this method for cooking all the meat they serve. Learn about smoke rings...how to cook proper beans...make decent potato salad...and, home made rolls. I'd help you with the roll part, but I'm still ironing out the wrinkles on that recipe.

this recipe looks fantastic and I think I creamed my panties. Also if you want to add a variety, add a spicier version of bbq sauce by mixing it with a tad bit of buffalo sauce.

Look into smokers to cook some meat. Proper smoked BBQ is F*CKING amazing. There is a place here in Vegas called "Rollin Smoke" that is hands down the best BBQ I've ever tasted. Not sure if they have much of a website, but I hope you can find some info online about it.
If you have more specific questions post them, because my dad owns a couple restaurants, and he has BBQ ribs and chicken on the menu. He also uses a smoker, so I can ask him a couple of questions about that if you have some. I also know Gman's brother knows his way around a smoker, so he may have some more info.

I can agree with Purple - smoked some Ribs last night at work....shit was amazing! Walmart brand Ribs, but the way they were seasoned and smoked...in the smoker for about 4 hours....amazing.

I always boil my ribs before i grill them.And for sauce i use equal parts Hienz ketchup and Coca cola brought to a boil.

If you do thats not BBQ. Also Coke=fail no matter what it is (just saying). Below are my favorite BBQ places in Kansas City, and FYI Kansas City=BBQ there are still plenty of places that the locals have told me I must try. You pretty much hit a high quality BBQ place here if you throw a rock. Let me know if you want me to find out more info. These places will also mail their sauces and spice rubs and you can taste and figure out what's in them. All of them have huge brick smokers like the pic below. thank you so much guys this is a great start. Greatness that's awesome. It helps with developing my floor plan. I don't need to see the inside of the smokers since that's not needed but thank you the picture helps a lot. I have to basically at this point come up with the layout of the establishment. For instance im basing my idea in away on franklins bbq in Austin. That dude is seriously my F*CKING idol right now in school. Im not copying him BUT I am forming my whole plan around something like that. All these places help a lot since I can see where they are based and then research the demographics of the area. Right now im doing good. My projections atm have me making 1500-2000$ in profit a week for me. ill keep you up to date soon. thanks guys.
